-3/4 cup of lumpy or homogeneous peanut butter (for those who don’t have it, here is its simple recipe)
-1.5 cups flour
-1 Egg
-1/2 cup sugar and 1/3 cup brown sugar (can be substituted with sugar)
-1/2 softened butter
- 2 tbsp. cornstarch (I used a potato starch)
- 1 tsp. baking soda (or 2 tsp baking powder)
- Vanilla sugar, salt – to taste.
How to cook peanut butter cookies recipe
1. In a bowl, combine flour with baking powder, add the starch and mix (if using slaked soda, it should be added into the wet ingredients)
2. In other bowl whisk the softened butter with a mixer for several minutes until it turns white lightly, gradually adding all the sugar. Then add an egg, vanilla sugar and salt.
3. Add peanut butter into an oil-sugar mixture, whisking (here is its great use!)
4. Add the resulting mixture into flour mixture, mix. The mixture should be the consistency of cottage cheese so it would be easy to form balls from it.
5. Preheat oven to 180 °C, lightly grease a baking sheet with oil or lay a parchment paper (I prefer the second).
6. Scoop 1.5 tsp of dough, form the balls and lay them on a baking sheet at a distance of 5-7 cm from each other (they will rise well). Then dip a fork into the water, then in sugar and press the criss-cross in the top of each cookie – you will get a nice picture-mesh. Bake for 12-15 minutes or until edges are golden brown (don’t overcook, peanuts burn quickly).
